Effortless Cod Lemon Herb Butter (Print Version)

# Ingredients:

01 - Handful fresh dill, chopped up.
02 - A bunch of parsley, also chopped.
03 - One lemon, squeeze it for the juice.
04 - Four chunky cod fillets (about 170g each).
05 - Two big spoons extra virgin olive oil.
06 - Some fresh thyme leaves, chopped.
07 - A few turns of the pepper grinder.
08 - A sprinkle of fine sea salt.
09 - Four heaped spoons of butter.

# Instructions:

01 - Pour the sauce all over your fish. Add some more chopped herbs and a couple lemon slices if you want.
02 - Toss butter into the pan to melt. Tip in lemon juice plus all your herbs. Give it a taste and throw in more salt or pepper if it needs it.
03 - Lay your cod pieces in the pan. Cook on each side for 4-5 minutes until they're not see-through any more. Set them aside and keep them cozy and warm.
04 - Warm up a nonstick pan over medium-high heat and pour in the olive oil.
05 - Pat the cod dry, then sprinkle both sides with salt and pepper.

# Notes:

01 - You can let the sauce thicken up a bit if you want.
02 - Feel free to swap out whatever herbs you've got handy.
03 - Fish is good to go if it flakes apart easy.
