Effortless Carrot White Beans Zatar (Print Version)

# Ingredients:

01 - 4 tbsp sumac
02 - 4 tsp za'atar
03 - 4 tbsp soy yogurt for topping
04 - 2 tbsp raw cane sugar
05 - 1/2 tsp fine sea salt
06 - 2 garlic cloves
07 - 150g cooked white beans
08 - 1 sweet onion
09 - 800ml water
10 - 1 red onion
11 - 1 pinch ground cinnamon
12 - 400g fresh carrots
13 - 2 tbsp olive oil, extra virgin
14 - 1 1/2 tsp fine sea salt
15 - 50ml fresh lemon juice
16 - 3 tbsp soy yogurt
17 - 1 tsp ground cumin
18 - 2 tbsp apple cider vinegar

# Instructions:

01 - Finish off by spooning on the pickled onions, throw some za'atar and sumac on top, then a bit of soy yogurt for good measure.
02 - Pop in the beans and water now. Stir in your spices, let it gently bubble for about 15 minutes. Grab your blender to make it nice and smooth, then mix in yogurt and lemon juice at the end.
03 - Toss the onions in until they look see-through. Add the carrots, garlic, and salt and let everything get a little color for a few minutes.
04 - Dice the big onion, chop the garlic roughly, and slice up those carrots into rings.
05 - Slice the red onion into strips. Mix it together with sugar, salt, and vinegar until it all comes together.
