Finish off by spooning on the pickled onions, throw some za'atar and sumac on top, then a bit of soy yogurt for good measure.

Pop in the beans and water now. Stir in your spices, let it gently bubble for about 15 minutes. Grab your blender to make it nice and smooth, then mix in yogurt and lemon juice at the end.

Toss the onions in until they look see-through. Add the carrots, garlic, and salt and let everything get a little color for a few minutes.

Dice the big onion, chop the garlic roughly, and slice up those carrots into rings.

Slice the red onion into strips. Mix it together with sugar, salt, and vinegar until it all comes together.
