Key Lime Pie Yogurt Bark (Print Version)

# Ingredients:

01 - 2.5 cups plain Greek yogurt, non-fat or low-fat, or substitute with dairy-free yogurt of choice
02 - 3.5 tablespoons key lime juice
03 - 2 tablespoons powdered swerve or substitute with 1 tablespoon honey, adjusted to taste
04 - 1 teaspoon vanilla extract
05 - 1 tablespoon lime zest
06 - 1/3 cup crushed gluten-free graham crackers (e.g., Simple Mills Honey Cinnamon Sweet Thins)
07 - 1/4 cup toasted unsweetened coconut
08 - 1 scoop vanilla protein powder, regular or dairy-free

# Instructions:

01 - In a medium mixing bowl, combine Greek yogurt, key lime juice, protein powder, lime juice, lime zest, powdered swerve (or sweetener of choice), and vanilla extract. Mix until smooth and well combined.
02 - Line a baking sheet with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin, even layer.
03 - Sprinkle the crushed graham crackers, toasted coconut, and lime zest evenly over the yogurt layer.
04 - Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt mixture is fully frozen and set.
05 - Once frozen, remove the baking sheet from the freezer. Lift the parchment paper or silicone mat from the baking sheet and break the frozen yogurt bark into pieces.
06 - Enjoy immediately or store the bark pieces in an airtight container in the freezer for up to 2 weeks. Store the bark in a single layer or between sheets of parchment paper to prevent sticking.

01 - If you don’t want a super icy consistency, use full-fat Greek yogurt. Lower-fat versions still work well.
02 - This recipe can be customized with toppings such as fresh berries, bananas, nut butter, dark chocolate chips, granola, or nuts.
