Loaded Carnitas Nachos (Print Version)

# Ingredients:

01 - 12 ounces thick tortilla chips
02 - 16 ounces refried beans
03 - 3 cups carnitas, store-bought or homemade
04 - 3 cups pepper jack cheese, shredded
05 - 1 cup white onion, finely diced
06 - 1 ½ cups tomatoes, diced
07 - 2 tablespoons chopped cilantro
08 - 1 jalapeno, diced or jarred

→ Optional toppings

09 - Sour cream
10 - Guacamole
11 - Salsa

# Instructions:

01 - Preheat the oven to 350°F and line a baking sheet with parchment paper.
02 - Place the canned refried beans in a medium saucepan with ½ cup of water and heat until warm and smooth.
03 - Place a thick layer of tortilla chips on the lined baking sheet.
04 - Spread a thin layer of refried beans over the chips, followed by the carnitas and shredded cheese.
05 - Bake in the oven for 10–15 minutes, or until the cheese is melted.
06 - Remove from oven and sprinkle diced tomatoes, onions, jalapenos, and cilantro on top.
07 - Serve immediately with sour cream, guacamole, and salsa as desired.

# Notes:

01 - You can purchase precooked carnitas in the meat department of your grocery store or make slow cooker carnitas.
02 - Use thicker tortilla chips to prevent them from getting soggy quickly.
03 - For best results, shred cheese yourself rather than using pre-shredded bagged cheese.
