Marry Me Chicken Pasta (Print Version)

# Ingredients:

01 - 8 ounces cavatappi pasta

→ Chicken

02 - 1 ½ pounds boneless, skinless chicken breasts, pounded to an even thickness
03 - 1 teaspoon paprika
04 - 1 teaspoon onion powder
05 - ½ teaspoon crushed red pepper
06 - ½ teaspoon kosher salt
07 - ½ teaspoon black pepper
08 - 1 tablespoon extra virgin olive oil
09 - 1 tablespoon unsalted butter

→ Sauce

10 - 1 tablespoon unsalted butter
11 - 1 small yellow onion, diced
12 - ½ cup (about 8 whole) sun-dried tomatoes, softened in hot water, chopped
13 - 1 teaspoon garlic, minced
14 - 1 cup (240 g) chicken broth
15 - 1 cup (238 g) heavy whipping cream
16 - ½ package (4 ounces) cream cheese, softened, cubed
17 - 1 cup (100 g) parmesan cheese, shredded
18 - 1 cup (113 g) mild cheddar cheese, shredded
19 - 1 cup (113 g) Monterey Jack cheese, shredded
20 - ½ teaspoon kosher salt
21 - ¼ teaspoon black pepper
22 - Parsley, chopped for garnish

# Instructions:

01 - To a large pot of salted boiling water, add pasta. Cook al dente according to package instructions (about 8-10 minutes). Reserve 1 cup of pasta water, then drain the rest. Set aside.
02 - Season chicken breasts evenly with paprika, onion powder, crushed red pepper, kosher salt, and black pepper.
03 - Heat oil and butter in a large skillet over medium-high heat. Once the butter is melted, add the chicken breasts. Cook for 5-7 minutes per side or until fully cooked and internal temperature reaches 165°F. Transfer chicken to a plate and tent with foil to keep warm.
04 - Using the same skillet, melt butter. Add diced onions and sun-dried tomatoes. Sauté for 3-5 minutes until softened. Add garlic and cook for an additional minute.
05 - Pour in chicken broth, stirring to loosen browned bits from the skillet. Add heavy cream, cream cheese, parmesan cheese, cheddar cheese, and Monterey Jack cheese. Stir until the cheeses are fully melted and combined. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.
06 - Mix the cooked pasta with the sauce. Season with kosher salt and black pepper. Stir until fully combined.
07 - Slice the cooked chicken breasts and arrange on top of the pasta. Garnish with chopped parsley and serve warm.
