BEST Moist Coffee Cake Easy (Print Version)

# Ingredients:

→ Cake

01 - 1 egg
02 - 1/4 cup vegetable oil or canola oil
03 - 1 teaspoon vanilla extract
04 - 3/4 cup sugar
05 - 1/2 cup milk
06 - 1/4 teaspoon salt
07 - 2 teaspoons baking powder
08 - 1 1/2 cups all-purpose flour

→ Streusel

09 - 2 tablespoons melted butter
10 - 1/2 cup brown sugar
11 - 2 teaspoons cinnamon
12 - 2 tablespoons all-purpose flour
13 - 1/2 cup walnuts, chopped (optional)

→ Icing Drizzle

14 - 1 tablespoon butter, room temperature
15 - 3/4 cup powdered sugar
16 - 1 tablespoon milk, extra if needed

# Instructions:

01 - Preheat oven to 375°F (190°C). Beat egg in a mixing bowl. Mix in sugar, milk, salt, oil, and vanilla. Spoon flour into a measuring cup and add to the batter. Sprinkle baking powder over the flour and gently mix into the top half of the flour. Stir the flour mixture into the batter until combined. Pour batter into a greased or parchment-lined 9x9-inch baking dish.
02 - In a microwave-safe bowl, melt butter in the microwave. Remove and mix in brown sugar, cinnamon, and flour until well combined. Add nuts if desired. Sprinkle streusel over the cake batter. Use a finger or the small end of a wooden spoon to poke the streusel halfway down into the cake batter, randomly 12-18 times.
03 - Bake for 25-30 minutes or until a toothpick inserted in the middle comes out with moist crumbs, but no runny batter. Do not overbake to prevent dryness.
04 - Mix butter and powdered sugar together. Thin with milk until the desired consistency is achieved. Lightly drizzle icing over the cake once baked and cooled.

# Notes:

01 - To prevent a dry cake, ensure baking time does not exceed 30 minutes or remove when a toothpick has moist crumbs remaining.
02 - Spoon the flour into the measuring cup for the batter to ensure accurate measurement; for streusel, you can scoop flour directly.
