Classic Egg-Free Chocolate Mousse (Print Version)

01 - 150g dark chocolate (around 70% cocoa solids)
02 - 120ml whole milk
03 - 250g heavy whipping cream
04 - Chocolate shavings for garnish (optional)

# Instructions:

01 - Chop the dark chocolate into small pieces. Heat the milk in a small saucepan until just before it starts to simmer (do not boil). Remove from heat and add the chopped chocolate, stirring gently until completely melted and smooth. Allow this mixture to cool at room temperature for about 60 minutes.
02 - In a separate bowl, whip the heavy cream until it forms soft peaks (be careful not to overwhip). Using a rubber spatula, gently fold the whipped cream into the cooled chocolate mixture in several additions, maintaining as much air as possible. Spoon or pipe the mousse into individual dessert glasses.
03 - Refrigerate the mousse for at least 1 hour before serving. Just before serving, garnish with chocolate shavings if desired for an elegant finish.
