Quick No Bake Oatmeal Scotchies (Print Version)

# Ingredients:

01 - ½ cup unsalted butter
02 - ½ cup milk
03 - 2 cups granulated sugar
04 - 1 teaspoon vanilla extract
05 - pinch of kosher salt
06 - 1 cup butterscotch morsels
07 - 3 cups quick cook oatmeal, dry

# Instructions:

01 - In large saucepan, on medium high heat, add butter, sugar and milk. Bring to a boil, and boil for a complete full minute. Remove from heat and stir in vanilla, salt and butterscotch morsels.
02 - Stir for about 1-2 minutes, the butterscotch won't completely melt, it's okay. Fold in oatmeal.
03 - Drop by large cookie scoop (2 tablespoon) onto a large sheet of parchment paper. Allow to set and cool, about 15 minutes. Store in airtight container. Enjoy.

# Notes:

01 - Store uneaten cookies in an airtight container at room temperature
02 - Use quick oats (not old-fashioned) as they're more finely processed and help the cookies stick together without flour
03 - The butterscotch morsels won't fully melt when stirred into the butter mixture - that's fine as long as they're softened
04 - These cookies are very sweet, more like a fudge with oatmeal than a traditional baked cookie
05 - Try substituting the butterscotch with Biscoff spread, Nutella, or peanut butter for different flavors
