No-Bake Strawberry Bars (Print Version)

# Ingredients:

→ Crust

01 - 1 ½ cups graham cracker crumbs
02 - 6 tablespoons butter, melted
03 - ¼ cup granulated sugar

→ Cheesecake

04 - 2 (8 oz.) packages cream cheese, room temperature
05 - 1 ¼ cups strawberries, chopped
06 - 1 cup granulated sugar
07 - 1 teaspoon vanilla extract
08 - 1 cup Cool Whip, thawed
09 - Additional fresh strawberries, optional garnish

# Instructions:

01 - Line an 8-inch square baking pan with parchment paper and set it aside.
02 - Combine the graham cracker crumbs, melted butter, and sugar in a medium bowl. Press into the bottom of the baking pan in an even layer. Refrigerate for 1 hour.
03 - Add strawberries and sugar to a blender or food processor and blend until finely chopped. Add cream cheese and vanilla; blend until smooth and well combined. Transfer to a mixing bowl and gently fold in the Cool Whip.
04 - Pour the cheesecake filling over the graham cracker crust and smooth the surface with a spatula.
05 - Cover with plastic wrap and place in the freezer for at least 4 hours or overnight.
06 - Use the parchment paper to lift the bars from the pan onto a cutting board. Slice into bars and optionally top with fresh strawberries. Serve immediately as a frozen treat or let soften at room temperature for 30 minutes before serving.

# Notes:

01 - Pulse about 8 graham crackers in your food processor to make crumbs.
02 - Store covered in the refrigerator for up to 5 days.
03 - Freeze in an airtight container for up to 3 months and thaw before serving.
