One Pot Kielbasa Pasta (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 1 pound smoked kielbasa or turkey/chicken sausage, sliced 1/4 inch thick
03 - 1.5 cups diced onion
04 - 2 cloves garlic, minced
05 - 2 cups low-sodium chicken broth
06 - 1 10-ounce can diced tomatoes
07 - 8 ounces dry small pasta
08 - 1/2 cup milk or heavy cream
09 - 1/2 teaspoon salt
10 - 1/2 teaspoon ground black pepper
11 - 1 cup shredded Cheddar cheese
12 - 1/3 cup thinly sliced scallions for garnish

# Instructions:

01 - Add olive oil to a 4-5 quart saute pan over medium-high heat.
02 - Fry the smoked kielbasa and onions until browned.
03 - Stir in the garlic and cook until fragrant, about 30 seconds.
04 - Add chicken broth, diced tomatoes, heavy cream, dry pasta, salt, and pepper.
05 - Simmer for 15 minutes, or until the pasta is tender.
06 - Remove the skillet from heat and stir in 1/2 cup of shredded Cheddar cheese.
07 - Top with the remaining cheese and cover until melted, spotty brown, and bubbly.
08 - Sprinkle with sliced scallions and serve immediately.

01 - This recipe creates 4 large servings. For larger groups or leftovers, double the recipe.
