Oreo Cherry Chocolate Chip Cheesecake (Print Version)

# Ingredients:

→ Crust

01 - 22 Oreo Cookies
02 - 3 tablespoons melted butter
03 - 1 tablespoon sugar

→ Filling

04 - 16 ounces softened cream cheese
05 - 16 ounces heavy cream
06 - 1 cup sugar
07 - 1/4 cup powdered sugar
08 - 6 ounces cherry gelatin mix
09 - 12 ounces frozen cherries
10 - 2 cups semisweet chocolate chips

# Instructions:

01 - Set cherries on counter to soften.
02 - Crush Oreos in food processor and add melted butter and sugar. Press mixture into bottom and partway up sides of a 9-inch springform pan. Refrigerate at least 30 minutes to firm.
03 - Beat cream cheese and sugar until well mixed. Set aside.
04 - In another bowl, add 1 1/2 cups of boiling water to gelatin mix and stir to dissolve. Set aside to cool.
05 - Dice half of the cherries.
06 - Whip heavy cream and powdered sugar until stiff peaks form.
07 - Once the gelatin has begun to thicken, fold it into the whipped cream and stir until blended.
08 - Fold and blend the cream cheese mixture into the whipped cream mixture.
09 - Fold diced cherries and chocolate chips into the mixture.
10 - Pour or spread the mixture into the prepared pan and garnish with whole cherries.
11 - Refrigerate for at least 4 hours or until firm. Optional: Garnish with crushed cookies or chocolate chips before serving.
