Quick Parmesan Zucchini Corn Side (Printer-Friendly Version)

# What You'll Need:

01 - 4 medium zucchini, diced
02 - 3 cloves garlic, minced
03 - 2 tablespoons fresh cilantro leaves, chopped

04 - 2 tablespoons olive oil
05 - 1 cup corn kernels (frozen, canned or roasted)
06 - ½ cup Parmesan cheese, shaved
07 - 2 tablespoons fresh lime juice

→ Seasonings

08 - ¼ teaspoon dried basil
09 - ¼ teaspoon dried oregano
10 - ¼ teaspoon dried thyme
11 - Kosher salt and freshly ground black pepper, to taste

01 - Heat olive oil in a large cast iron skillet over medium high heat. Add garlic, and cook, stirring frequently, until fragrant, about 1 minute.
02 - Stir in zucchini, corn, basil, oregano and thyme. Cook, stirring occasionally, until zucchini is tender and cooked through, about 4-5 minutes; season with salt and pepper, to taste.
03 - Stir in lime juice and cilantro.
04 - Serve immediately, topped with Parmesan.
