Slice the onions thinly. Mince the garlic. Cut the Brie into pieces.

Cook the onions in butter for 15 minutes. Add oil and continue cooking for another 10 minutes until lightly browned.

Meanwhile, cook the pasta according to package instructions.

Briefly sauté the garlic and seasonings with the onions. Deglaze with cream, add the Brie and herbs, and let simmer.

Add the pasta and pasta water, simmer briefly until desired consistency is reached. Adjust seasoning to taste.
