01 - 2 cups heavy whipping cream (double cream UK)
02 - ¼ cup whole milk
03 - ⅓ cup freshly squeezed lemon juice
04 - ⅓ cup sugar
05 - 1 ½ large peaches, cut into chunks
06 - ½ peach, optional (cut into tiny pieces or reserved for garnish)

# Instructions:

01 - Pour the sugar into the freshly squeezed lemon juice and stir well, ensuring it is partially dissolved.
02 - Pour the sweetened lemon juice into a blender. Add the heavy cream and whole milk, blending for 20 to 30 seconds.
03 - Add the peach pieces to the blender and blend briefly until combined.
04 - Pour the mixture into a metal pan and place it in the freezer for about one hour. Optionally, mix in tiny pieces of the remaining peach at this stage.
05 - Remove the pan from the freezer and stir the mixture with a spoon. Repeat this process two more times over two hours until the texture resembles ice cream.
06 - Once ready, scoop the ice cream into bowls, cups, or cones. Garnish with a peach slice, if desired.
