Pineapple Bacon Burger Flavor (Print Version)

# Ingredients:

01 - 1 pound lean ground beef (93%-7% fat ratio)
02 - 4 tablespoons smoky style barbecue sauce (2 tablespoons mixed into the ground beef, 2 tablespoons for brushing)
03 - ½ teaspoon salt
04 - ¼ teaspoon black pepper
05 - 8 slices smoked bacon, uncooked
06 - 4 slices fresh pineapple (½-inch thick, core removed)
07 - 4 bakery-style burger buns (Brioche style)

# Instructions:

01 - Preheat the oven to 400°F. Line a large rimmed baking sheet with aluminum foil and an oven-safe wire rack. Set aside.
02 - In a large bowl, mix together the ground beef, 2 tablespoons barbecue sauce, salt, and black pepper. Be careful not to overwork the meat to avoid tough burgers.
03 - Divide the ground beef mixture into four equally sized patties, approximately 4 ounces each. Shape each patty to be about 3 ½ inches in diameter and ½ inch thick.
04 - On a large tray or cutting board, place two slices of bacon in a criss-cross pattern. Place one burger patty at the center of the 'X', then top it with one slice of pineapple. Fold the bacon strips over the patty and pineapple, securing with a toothpick at the center where the bacon overlaps.
05 - Repeat the bacon and pineapple wrapping process for the remaining three burger patties. Place assembled burgers onto the prepared baking sheet.
06 - Bake the burgers for 15 minutes. Remove from the oven, brush the remaining 2 tablespoons of barbecue sauce over the bacon using a pastry brush. Return to the oven and bake for another 10-15 minutes, until well done (internal temperature of 160°F) or until desired doneness. For medium or medium-well, reduce bake time by 5-6 minutes. Use an instant-read thermometer if desired.
07 - Toast the burger buns, if desired, while the burgers are baking.
08 - Once removed from the oven, let the burgers rest on the baking sheet for 5 minutes to allow juices to redistribute. Serve on toasted buns as-is, or add your preferred toppings such as lettuce or condiments.

# Notes:

01 - For well-done burgers, the internal temperature should reach 160°F. Burgers will continue to rise 3-5°F during resting.
02 - You can substitute Brioche buns with any preferred burger buns.
