# Ingredients:

→ For the hearty filling

01 - 450g lean ground beef
02 - 1 cup yellow onion, diced
03 - 1 medium green bell pepper, diced
04 - 85g pepperoni, chopped
05 - 1 tablespoon garlic, chopped
06 - 80ml pizza sauce
07 - 1 tablespoon Italian seasoning
08 - 250g ricotta cheese
09 - 100g mozzarella cheese, shredded
10 - 40g bacon, crumbled
11 - 8 large flour tortillas

→ For the delicious topping

12 - 480ml pizza sauce
13 - 250g mozzarella cheese, shredded
14 - 85g pepperoni slices
15 - 30g bacon, crumbled

# Instructions:

01 - Preheat your oven to 190°C. In a large skillet over medium-high heat, cook the ground beef, crumbling it thoroughly with a spoon, until evenly browned and fully cooked.
02 - Add diced onion, bell pepper, and chopped pepperoni to the skillet with the beef. Stir and sauté until vegetables are softened and the pepperoni releases its oils, about 5-7 minutes.
03 - Stir in chopped garlic and cook for 2 minutes until fragrant. Remove skillet from heat to prevent burning.
04 - Mix pizza sauce, Italian seasoning, ricotta cheese, shredded mozzarella, and crumbled bacon into the beef mixture until well combined and creamy.
05 - Lay out each flour tortilla and spread the beef mixture along the center. Roll tightly and place seam-side down in a greased baking dish.
06 - Pour remaining pizza sauce over the rolled tortillas. Sprinkle shredded mozzarella evenly, add pepperoni slices, and top with crumbled bacon.
07 - Bake in the preheated oven for 20-25 minutes until the cheese is melted and lightly golden. Let cool for 5 minutes before serving to allow the filling to set.

# Notes:

01 - Combines all your favorite pizza flavors into an enchilada for ultimate comfort food.
02 - Letting the enchiladas rest after baking ensures cleaner slices when served.
03 - Feel free to add mushrooms, olives, or jalapeños for extra customization.
