Classic Pizza Funghi (Print Version)

# Ingredients:

→ Dough

01 - Pinch of sugar
02 - 1 1/4 cups (280ml) lukewarm water
03 - 1/2 cube fresh yeast
04 - 4 cups (500g) spelt or wheat flour (type 1050)
05 - 1 teaspoon salt
06 - 1 teaspoon olive oil

→ Topping

07 - 1.1 lbs (500g) mushrooms
08 - 10.5 oz (300g) cherry tomatoes
09 - 1 garlic clove
10 - 14 oz (400g) strained tomatoes
11 - 1 teaspoon oregano
12 - 1 teaspoon thyme
13 - 4.4 oz (125g) reduced-fat mozzarella
14 - 4.2 oz (120g) reduced-fat grated cheese
15 - Handful of fresh basil leaves
16 - Pepper

# Instructions:

01 - Dissolve sugar in lukewarm water, stir in yeast. Mix with flour, salt, and oil to form a smooth dough.
02 - Knead the dough thoroughly, shape into a ball, and let it rest covered for 2-3 hours.
03 - Slice the mushrooms, halve the cherry tomatoes. Season the tomato sauce with garlic and herbs. Dice the mozzarella.
04 - Preheat the oven to 350°F (180°C) fan/convection. Divide the dough into portions, roll into flat rounds, and place on baking sheets.
05 - Spread with sauce, top with mushrooms and tomatoes, sprinkle with cheese. Bake for 20-25 minutes.

01 - Add fresh basil leaves only after baking the pizza.
