Lay the puff pastry flat and cut it into 12 equal pieces. Press each piece into a muffin tin cup, folding over any excess at the edges. Gently press any overlapping dough against the walls of the cup to prevent the filling from leaking.

In a mixing bowl, whisk together the eggs, cream cheese, salt, pepper, and garlic powder until smooth and creamy. Dice the ham into small cubes and fold it into the mixture along with the shredded Gouda cheese.

Spoon about one heaping tablespoon of filling into each pastry-lined muffin cup, making sure to distribute the liquid evenly.

Bake in a preheated oven at 355°F (180°C) fan/convection for about 25 minutes until golden brown. Remove from the muffin tin immediately and cool on a wire rack.
