01 - 1/4 cup (60g) butter
02 - 3 medium eggs
03 - 1/4 cup (60g) sugar
04 - 1 teaspoon lemon zest
05 - 1 2/3 cups (200g) all-purpose flour
06 - 1 teaspoon baking powder
07 - Pinch of salt
08 - 3/4 cup plus 2 tablespoons (200g) low-fat quark cheese

→ Decoration

09 - 2 teaspoons powdered sugar

# Instructions:

01 - Preheat oven to 350°F (180°C) or 320°F (160°C) fan/convection. Line a muffin tin with paper liners.
02 - Melt the butter in a small saucepan and set aside.
03 - Beat eggs with sugar and lemon zest for 5-6 minutes until creamy. Mix flour, baking powder, and salt, then sift and add to the egg mixture.
04 - Briefly stir in the quark and melted butter. Distribute the batter among the paper liners.
05 - Bake for 18-20 minutes until golden brown. Let cool on a wire rack and dust with powdered sugar.
