Combine granulated sugar, light corn syrup, and water in a medium saucepan. Bring the mixture to a boil over medium-high heat, stirring gently until sugar dissolves.

Attach a candy thermometer to the saucepan and cook until the mixture reaches 300°F (hard crack stage). Monitor carefully to avoid burning.

Remove saucepan from heat. Stir in vanilla extract if using, then divide the syrup into small heatproof bowls. Tint each bowl with a different gel food coloring.

Drizzle small amounts of each colored syrup into a single dipping bowl to create a rainbow swirl effect.

Holding the stick, dip each apple into the rainbow mixture, twisting slightly to coat evenly. Let excess syrup drip off before placing on parchment paper.
