Preheat oven to 350°F (175°C).

Mix flour, cocoa powder, salt, and baking soda together in a small bowl.

In a larger mixing bowl, cream butter and both sugars together for about a minute.

Add the egg, red food color gel, and vanilla extract, and beat until combined.

Add the dry ingredient mixture to the wet ingredients and mix until just combined.

Stir in white baking chips and crushed Oreos.

Drop tablespoons of dough onto parchment-lined or ungreased baking sheets, spacing them about 2 inches apart.

Top with additional Oreo pieces and white chips if desired.

Bake in the center of the oven for 10 to 12 minutes, until the edges are set and the centers are still soft.

Remove from oven and let cool on the baking sheet for five minutes before transferring to a wire rack.
