Preheat the oven to 350°F (175°C).

In a small bowl, beat the eggs, setting aside 2 tablespoons for brushing on top of the crescent rolls later. Scramble the remaining eggs in a pan over medium heat until just set. Season with salt and pepper.

Unroll the crescent dough on a clean work surface and separate it into 8 individual triangles.

Place half a slice of Cheddar cheese on each triangle. Spoon a small portion of scrambled eggs onto each triangle, then add one sausage link.

Starting at the wide end of each triangle, gently roll the dough around the sausage and eggs, tucking in the sides slightly as you go. Place each roll-up on an ungreased baking sheet.

Lightly brush the tops of each roll-up with the reserved beaten egg and sprinkle with a bit of salt and pepper.

Bake in the preheated oven for 15 to 18 minutes, or until the roll-ups are golden brown and flaky.
