Combine mozzarella, ricotta, Italian seasoning, and garlic powder in a bowl. Cover and chill until ready to assemble.

Set oven temperature to 375°F.

Line a baking sheet with parchment paper and coat with cooking spray or sprinkle with cornmeal.

Separate the dough into 4 equal portions.

Roll each dough piece on a lightly floured surface into circles approximately 1/8 inch thick.

Spread 1/4 of the cheese mixture on one half of each dough circle and top with optional fillings as desired.

Fold the dough over the filling to create a half-moon shape. Crimp the edges with a fork or your fingers.

Brush the tops of the calzones with beaten egg and garnish with pizza seasoning and parmesan cheese.

Place the calzones on the prepared baking sheet and bake for approximately 30 minutes until golden brown and crisp.
