# Ingredients:

01 - 4 medium eggs, at room temperature
02 - 250g granulated sugar
03 - 1 packet vanilla sugar (or 1 teaspoon vanilla extract)
04 - 150ml sunflower oil
05 - 1 packet baking powder (about 15g or 1 tablespoon)
06 - 350g all-purpose flour
07 - 175ml sparkling mineral water
08 - Butter for greasing the pan

→ For the glaze and decoration

09 - 250g powdered sugar, sifted
10 - 4 tablespoons fresh lemon juice (or water)
11 - 2-3 tablespoons colorful sprinkles

# Instructions:

01 - In a large mixing bowl, whisk together the eggs, granulated sugar, vanilla sugar, and oil until well combined. In a separate bowl, mix the baking powder with the flour, then gradually add to the wet ingredients, stirring until just combined. Finally, gently stir in the sparkling mineral water - the batter will be somewhat thin, which is normal.
02 - Preheat your oven to 350°F (180°C) or 320°F (160°C) for convection ovens. Generously grease a rectangular baking sheet (approximately 15×10 inches/39×26cm) with butter. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 25-30 minutes until golden and a toothpick inserted in the center comes out clean. Allow to cool completely in the pan.
03 - Once the cake is completely cool, prepare the glaze by whisking together the sifted powdered sugar and lemon juice until smooth and pourable. Spread the glaze evenly over the cake and immediately sprinkle with colorful sprinkles before the glaze sets. Let the glaze harden completely before cutting into approximately 24 squares.
