Shrimp Scampi Linguine Dish (Print Version)

01 - 8 ounces linguine
02 - 2 tablespoons unsalted butter
03 - 1 pound medium shrimp, peeled and deveined
04 - 3 cloves garlic, minced
05 - ¼ teaspoon crushed red pepper flakes
06 - ¼ cup white wine
07 - ¼ cup freshly squeezed lemon juice
08 - 1 tablespoon lemon zest
09 - 2 tablespoons chopped fresh parsley leaves
10 - Kosher salt and freshly ground black pepper, to taste
11 - ¼ cup freshly grated Parmesan cheese

# Instructions:

01 - In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
02 - Melt butter in a large cast iron skillet over medium-high heat. Add shrimp, garlic, and red pepper flakes. Cook, stirring occasionally, until shrimp turn pink, about 2-3 minutes.
03 - Stir in white wine and lemon juice. Cook, stirring occasionally, until slightly reduced, about 5 minutes; remove from heat.
04 - Stir in pasta, lemon zest, and parsley. Season with kosher salt and black pepper to taste.
05 - Serve immediately, topped with freshly grated Parmesan cheese.

01 - Chicken stock can be substituted for white wine if a non-alcoholic option is preferred.
