Quick Shrimp Scampi Pasta (Printer-Friendly Version)

# What You'll Need:

→ Pasta & Seafood

01 - 8 ounces linguine
02 - 1 pound medium shrimp, peeled and deveined

→ Fresh Produce

03 - 3 cloves garlic, minced
04 - 1 tablespoon lemon zest
05 - ¼ cup fresh lemon juice
06 - 2 tablespoons fresh parsley leaves, chopped

→ Pantry & Dairy

07 - 2 tablespoons unsalted butter
08 - ¼ cup white wine
09 - ¼ cup freshly grated Parmesan
10 - ¼ teaspoon crushed red pepper flakes
11 - Kosher salt and freshly ground black pepper, to taste

# Let's Cook!:

01 - In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
02 - Melt butter in a large cast iron skillet over medium high heat. Add shrimp, garlic and red pepper flakes. Cook, stirring occasionally, until pink, about 2-3 minutes.
03 - Stir in wine and lemon juice. Cook, stirring occasionally, until slightly reduced, about 5 minutes; remove from heat.
04 - Stir in pasta, lemon zest and parsley; season with salt and pepper, to taste.
05 - Serve immediately, topped with Parmesan.

# Recipe Notes:

01 - Chicken stock can be substituted for white wine if preferred.
