# Ingredients:

01 - 3 tablespoons olive oil
02 - 2 pounds smoked sausage, sliced into bite-sized pieces
03 - 1 medium onion, chopped
04 - 3 cloves garlic, minced
05 - 2 cups chicken broth
06 - 12 ounces diced tomatoes, undrained
07 - 1/2 cup heavy cream
08 - 1/4 teaspoon pepper
09 - 8 ounces dry whole wheat bow tie pasta
10 - 2 cups shredded cheddar cheese

# Instructions:

01 - Slice smoked sausage into bite-sized pieces. Add olive oil to a large pot or Dutch oven and sauté onions and sausage over medium heat until onions soften and sausage browns.
02 - Stir in minced garlic and cook for 30 seconds until fragrant. Add chicken broth, diced tomatoes (undrained), heavy cream, and pepper. Stir well to combine.
03 - Add the dry pasta to the pot, ensuring it is stirred into the sauce and fully covered with liquid. Cover the pot and simmer for 15-20 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
