S’mores Quesadilla Chocolate Marshmallow (Print Version)

01 - 8 corn tortillas
02 - 8 ounces semi-sweet chocolate chips
03 - 2 cups mini marshmallows
04 - 8 tablespoons graham cracker crumbs

# Instructions:

01 - Lay the tortillas on a large skillet coated with cooking spray or grill grate over a medium flame.
02 - Immediately top four of the tortillas with the chocolate chips, marshmallows, and graham cracker crumbs. Allow the marshmallows to begin to puff up and then top with the remaining tortillas. Press gently with a spatula to seal.
03 - Flip the quesadillas carefully. Allow to cook for an additional minute and then transfer to a plate or serving platter.
04 - Let the quesadillas rest for 1-2 minutes and then cut with a pizza cutter into four triangles. Serve immediately.

# Notes:

01 - For crispier edges, use a little more butter or oil on the outside of the tortilla.
02 - To make ahead, assemble without cooking and wrap tightly; cook just before serving for best texture.
03 - Mix and match chocolate: milk chocolate, dark chocolate, peanut butter, or fruity flavors like lemon curd all work well.
04 - To avoid sticking, use a non-stick skillet or make sure your pan is well seasoned before starting.
