Chop the beef into pieces, dice up the onions, and smash the garlic so it's ready.

Heat a slick of oil. Sear meat in parts so it gets some good color, then scoop it out once it's done.

Throw in the onions and cook them down. Scrape up any yummy brown bits, then add garlic and tomato paste for a quick cook.

Bit by bit, splash in the wine and let it reduce. After that, pour in water, toss in all the spices, and give it a good stir.

Click a lid on and let it bubble for 90 minutes. Need it thicker? Cook for another 15–30 minutes with no lid on.
