Southern Peach Cobbler Delight (Print Version)

# Ingredients:

→ Filling

01 - 6 large peaches, pitted, peeled, and sliced (about 4-5 cups)
02 - 1/4 cup granulated sugar
03 - 1/4 cup brown sugar
04 - 1/4 teaspoon cinnamon
05 - 1/8 teaspoon nutmeg
06 - 1/2 lemon, juiced
07 - 2 teaspoons cornstarch

→ Topping

08 - 1 cup all-purpose flour
09 - 1/4 cup granulated sugar
10 - 1/4 cup brown sugar
11 - 1 teaspoon baking powder
12 - 1/2 teaspoon salt
13 - 6 tablespoons cold butter, cut into small cubes
14 - 1/3 cup hot water
15 - 3 tablespoons granulated sugar, to sprinkle on top

# Instructions:

01 - Preheat the oven to 400 degrees Fahrenheit.
02 - In a medium bowl, combine the peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix until evenly coated.
03 - Transfer the peach mixture into an 11-inch cast-iron skillet or baking dish.
04 - In another medium bowl, combine the flour, sugars, baking powder, and salt. Mix well.
05 - Add the cold butter cubes to the flour mixture. Use your fingers or a pastry cutter to blend until the mixture resembles wet sand.
06 - Mix in the hot water just until the topping is combined. Avoid overmixing.
07 - Spread the topping evenly over the peaches and sprinkle with the granulated sugar.
08 - Place the skillet or baking dish on a larger baking tray to catch any spills. Bake for 30-35 minutes or until the top is golden brown.
09 - Let cool slightly and serve with ice cream or whipped cream, if desired.

# Notes:

01 - If using fresh peaches that aren’t sweet enough, increase both sugars in the filling to 1/3 cup each.
02 - Frozen peaches can be used, but thaw them before preparing the filling.
03 - Canned peaches in light syrup are also an option. Use 3 cans, draining two, and leaving the syrup from one for additional flavor.
