# Ingredients:

01 - 1 mini watermelon, or 1/4 of a regular watermelon, cut into wedges or bite-sized pieces
02 - 1/4 cup cilantro, chopped
03 - 1/2 jalapeño, thinly sliced or chopped for less intense heat, or adjusted to taste
04 - 3 tablespoons lime juice
05 - 2 tablespoons olive oil
06 - 2 teaspoons honey
07 - 1/2 teaspoon kosher salt
08 - Pinch of red chili flakes (optional)
09 - Flaky sea salt and extra red chili flakes for garnish

# Instructions:

01 - Cut the mini watermelon into handheld-sized wedges or bite-sized pieces.
02 - Whisk together lime juice, olive oil, honey, salt, and chili flakes in a small bowl. Add cilantro and jalapeño and stir to combine.
03 - Arrange watermelon wedges on a large serving platter or individual plates, then spoon the dressing over the top. Finish with flaky sea salt and extra chili flakes if desired.
04 - Add the cubed watermelon to a bowl and toss gently with the dressing. Serve garnished with extra cilantro, jalapeño slices, flaky sea salt, and additional chili flakes if desired.
