Steak Cheese Flour Quesadillas (Print Version)

# Ingredients:

→ Filling

01 - 1 tablespoon olive oil
02 - 9 oz flank steak or sirloin, thinly sliced
03 - 1/2 teaspoon salt
04 - 1/4 teaspoon black pepper
05 - 1/2 teaspoon smoked paprika
06 - 1/2 small red bell pepper, diced
07 - 1/2 small onion, finely sliced
08 - 4 cloves garlic, minced

→ Assembling

09 - 4 medium flour tortillas
10 - 1/2 cup shredded mozzarella cheese
11 - 1/2 cup shredded cheddar cheese
12 - 1 tablespoon butter for cooking
13 - Fresh chopped parsley for garnish

# Instructions:

01 - Heat the olive oil in a skillet over medium heat. Add the steak and season it with salt, black pepper, and smoked paprika. Sauté the steak for 4-5 minutes on each side until browned and cooked through. Remove the steak from the skillet and set aside.
02 - In the same skillet, add the diced red bell pepper and sliced onion. Sauté for about 5 minutes until softened and lightly caramelized. Stir in the minced garlic and cook for 30 seconds until fragrant. Remove from heat.
03 - Lay out the tortillas on a clean surface. Evenly sprinkle half of the mozzarella and cheddar over two of the tortillas. Top with the cooked steak, sautéed vegetables, and the remaining cheese. Place the other two tortillas on top to form quesadilla sandwiches.
04 - Heat a clean skillet over medium heat and melt half of the butter. Cook one quesadilla at a time for 2-3 minutes per side, pressing down gently, until the tortilla is golden brown and the cheese is melted. Repeat with the second quesadilla.
05 - Transfer the quesadillas to a cutting board and let them rest for a minute. Cut into wedges and sprinkle with fresh chopped parsley before serving.
