Preheat oven to 190°C (375°F). Spray two 9x5 loaf pans with nonstick spray and set aside.

In a large bowl, using a stand mixer with a paddle attachment, cream butter and sugar together until light and fluffy.

In a small bowl, beat eggs with a fork. Add eggs to the butter-sugar mixture and beat until combined. Mix in mashed bananas until fully incorporated.

Sift together the flour, baking soda, and salt. Gradually add the sifted dry ingredients to the banana mixture and mix until just combined. Avoid overmixing.

Gently fold the flour-coated strawberries into the batter.

Pour the batter into the prepared loaf pans. Bake at 190°C (375°F) for 15 minutes. Reduce heat to 175°C (350°F) and bake for an additional 30 minutes, until the edges are slightly browned or a toothpick inserted into the center comes out clean.

Let the loaves cool completely before removing them from the pans.
