Strawberry Lemon Blondies Bars (Print Version)

# Ingredients:

→ Blondies

01 - 1 cup unsalted butter, at room temperature
02 - 3/4 cup sugar
03 - 1 large egg
04 - 1/4 cup fresh squeezed lemon juice
05 - 2 1/4 cups all purpose flour
06 - 1/2 tsp baking powder
07 - 1/2 tsp salt
08 - 1 cup diced fresh strawberries

→ Glaze

09 - 1 cup powdered sugar, sifted
10 - 1 Tbsp strawberry puree (about 2 large strawberries)
11 - 1 Tbsp lemon juice, or as needed for consistency

# Instructions:

01 - Preheat the oven to 350°F (175°C).
02 - Line a 9x9 inch square baking pan with parchment paper with long edges for easy removal of blondies.
03 - Cream the butter and sugar together until light and fluffy. Beat in the egg until fully incorporated.
04 - Mix in the lemon juice. It may not fully incorporate at this stage, which is fine.
05 - In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until no dry flour remains.
06 - Gently fold in the diced fresh strawberries. Transfer the dough to the prepared pan and spread it out evenly. Use a large offset spatula for best results.
07 - Bake for 30-35 minutes, or until the edges are lightly golden and the center is set. A toothpick inserted in the center should come out moist but not wet. Let the blondies cool completely on a rack.
08 - For the glaze, trim and puree the strawberries in a small food processor. Strain through a small strainer to obtain 1 tablespoon of puree.
09 - Whisk together powdered sugar, strawberry puree, and lemon juice until smooth and lump-free. Adjust thickness by adding more sugar or lemon juice as needed.
10 - Spread the glaze over the cooled blondies. Allow the glaze to set before slicing into squares.

01 - When measuring flour, fluff it first, then scoop it and level without compacting for accuracy.
02 - If you prefer an alternative to strawberry puree, use lemon juice, but avoid strawberry jam as it can make the glaze overly sweet.
03 - For a variation, try using diced rhubarb, blueberries, raspberries, or a combination of strawberries and rhubarb.
