Light strawberry-raffaello dessert (Print Version)

# Ingredients:

→ For the cream

01 - 500g quark or farmer's cheese (about 2 cups)
02 - 7 Raffaello coconut-almond candies
03 - 1 packet vanilla sugar (or 1 tbsp vanilla extract and 2 tsp sugar)
04 - 10 fresh strawberries, rinsed and dried
05 - 1 teaspoon fresh lemon juice

→ For decoration

06 - 5 fresh strawberries
07 - 5 whole Raffaello coconut-almond candies

# Instructions:

01 - In a medium mixing bowl, combine the quark, vanilla sugar (or vanilla extract and sugar), and lemon juice. Using a hand mixer or whisk, beat until smooth and creamy, about 2 minutes.
02 - Hull and dice the 10 strawberries into small pieces (about 1/4 inch cubes). Unwrap the 7 Raffaello candies and place them in a ziplock bag. Gently crush them with a rolling pin or the bottom of a glass until they're broken into small pieces, but not completely pulverized.
03 - Gently fold the diced strawberries and crushed Raffaello pieces into the quark mixture using a spatula. Be careful not to overmix - you want distinct pieces of strawberry and candy throughout the cream.
04 - Divide the mixture evenly among 5 individual dessert bowls or glasses. Slice the remaining 5 strawberries and arrange them on top of each serving. Finish by placing a whole Raffaello candy on top of each dessert. For best flavor, refrigerate for 30 minutes before serving.
