01 - ½ cup sago pearls
02 - 2 lbs strawberries, washed and stems removed
03 - ¾ cup evaporated milk
04 - 3 tablespoons condensed milk, adjust to taste
05 - 1 cup whole-fat, chilled coconut milk
06 - Chopped strawberry pieces for garnish

# Instructions:

01 - In a medium saucepan, bring water to a boil. Add the sago, reduce the heat to medium-high, and cook while stirring occasionally until translucent, about 15 minutes. Remove from heat, cover, and let it sit for another 10-15 minutes until fully transparent.
02 - Strain the cooked sago and rinse it with cold water to stop the cooking process. Submerge the sieve with sago into a bowl of water to prevent drying. Set aside.
03 - Place the washed strawberries, evaporated milk, and condensed milk into a blender. Blend until smooth. Taste and add more condensed milk if necessary. Chill in the refrigerator until assembly.
04 - Drain the sago pearls. In a large mixing bowl, combine the sago, chilled coconut milk, and the strawberry mixture. Mix until evenly combined.
05 - Distribute the mixture into individual-sized cups and garnish with fresh strawberry pieces. Serve immediately and enjoy.
