Remove the stems from the strawberries. If not already frozen, place them in the freezer until thoroughly frozen.

Using a high-speed blender, blend the frozen strawberries, sugar of choice, lemon juice or zest, and optional salt until the mixture is smooth and achieves a sorbet-like texture. If using a regular blender, let the strawberries thaw slightly before blending.

If working with a regular blender, transfer the mixture to an ice cream machine and churn according to the manufacturer's instructions for a creamier consistency.
