Preheat your oven to 400°F (200°C) and move the rack to the middle position. Line a baking sheet with foil or parchment paper for easy clean-up.

Place the salmon, skin-side down, on the baking sheet. Season with salt and pepper. Spread about a tablespoon of sweet chili sauce on each piece, totaling approximately 1/4 cup. Use the back of a spoon to evenly distribute the sauce. Add more sauce if desired.

Bake the salmon for 13-15 minutes or until it flakes easily with a fork. Note that the salmon will continue cooking slightly after being removed from the oven. If the salmon is thicker than an inch at the thickest part, it may require additional cooking time.

Squeeze fresh lime juice over the salmon and serve with jasmine rice, scallions, cilantro, cucumber, and sesame seeds sprinkled on top.
