Teriyaki Ground Turkey with Veggies (Print Version)

01 - 1 Tbsp olive oil
02 - 3 garlic cloves, minced
03 - 1 ½ cups chopped white onion
04 - 1 lb lean ground turkey
05 - 1 cup shredded carrots
06 - 2 cups broccoli florets, chopped small
07 - 1 cup frozen peas
08 - 1 ½ cups teriyaki sauce
09 - 4 cups cooked rice (optional, to serve with)

# Instructions:

01 - Cook 1½ cups of rice according to package instructions using a rice cooker or in a pot on the stove.
02 - Shred 1 cup of carrots, chop 1½ cups of onion, mince 3 garlic cloves, and chop 2 cups of broccoli into bite-size pieces.
03 - Heat a frying pan over medium heat with 1 Tbsp olive oil. Add minced garlic and chopped onion. Cook until the onion turns translucent, about 1-2 minutes.
04 - Add 1 lb ground turkey to the pan. Break apart the turkey using the tip of a wooden spatula and cook until it’s no longer pink.
05 - Add chopped broccoli, shredded carrots, and frozen peas to the pan. Stir together, cover with a lid, and cook until the broccoli is slightly soft when poked with a fork, about 3-4 minutes.
06 - Pour 1½ cups of teriyaki sauce over the mixture and stir well. Cook for another 1-2 minutes, until the sauce is heated through.
07 - Scoop the cooked rice into bowls and top with the teriyaki ground turkey mixture. Serve and enjoy!
