Season chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 4–5 minutes on each side until golden brown without fully cooking.

Melt butter in the same skillet. Add thinly sliced onions and mushrooms. Cook over medium heat, stirring occasionally, until softened and caramelized, about 8–10 minutes.

Sprinkle flour over onions and mushrooms, stirring to coat. Cook for 1 minute, then slowly whisk in chicken broth until a smooth gravy forms. Simmer until thickened.

Preheat oven to 375°F (190°C). Place seared chicken breasts in a baking dish. Spoon onion-mushroom mixture over the chicken, top each with a slice of cheese, and pour gravy over everything. Cover with foil and bake for 20–25 minutes until chicken is cooked through and cheese is melted.
