Vegetable Soup Hearty Veggies (Print Version)

# Ingredients:

01 - 1/4 cup olive oil
02 - 1 yellow onion, diced
03 - 2 stalks celery, diced
04 - 2 cloves garlic, minced
05 - 2 teaspoons kosher salt
06 - 1/2 teaspoon coarse ground black pepper
07 - 1 large potato, peeled and diced
08 - 2 carrots, sliced
09 - 1 cup corn
10 - 1 cup peas
11 - 1 cup green beans, chopped
12 - 2 vine tomatoes, diced
13 - 4 cups chicken broth
14 - 2 cups V-8 juice

# Instructions:

01 - In a large stock pot, add the olive oil over medium heat and sauté the onions, celery, and garlic for 4-5 minutes until translucent.
02 - Add in the rest of the ingredients, bring to a boil, then reduce to a simmer for 30 minutes.
