Mix the yeast into the warm water, then let it sit for about 6 minutes to bloom. Stir in olive oil, sugar, and salt when ready.

Add the flour into the mix slowly. Knead it on a floured surface until a smooth ball forms.

Place the dough in an oiled bowl, cover, and let it rest for 45 minutes to an hour at room temperature.

Blend the Zaatar with olive oil until it reaches a spreadable consistency.

Divide the dough into 7-9 portions and flatten each into a 1.5cm thick, round disc.

Spoon the Zaatar mix onto the dough rounds. Bake at 230°C for 10 to 12 minutes until golden.
