Chop potatoes into halves and then cut each half into large wedges.

Place potato wedges in a large bowl and add olive oil. Toss to coat the potatoes evenly.

In a small bowl, combine garlic powder, smoked paprika, oregano, salt, and black pepper.

Add the spice mixture to the potato wedges and toss to ensure they are fully coated.

Set the Air Fryer to 400°F and spray the basket with cooking spray.

Place the potato wedges in the Air Fryer basket, ensuring they do not touch each other. Cook in batches if necessary. Cook for 18-20 minutes, shaking the basket halfway through.
