Chicken Bacon Ranch Salad (Print Version)

# Ingredients:

01 - 1 head romaine lettuce, roughly chopped
02 - 4 grilled chicken breasts, chopped
03 - 1 English cucumber, small diced
04 - 1 pint cherry tomatoes, quartered
05 - 8 slices bacon, cooked and chopped
06 - 4 green onions, sliced
07 - ½ cup parsley, roughly chopped
08 - ½ cup pine nuts
09 - 1 cup ranch dressing

# Instructions:

01 - Add the lettuce, chicken, cucumber, tomatoes, bacon, green onions, parsley, and pine nuts to a large mixing bowl.
02 - Drizzle the ranch dressing on top, then stir to combine.

# Notes:

01 - The 4 grilled chicken breasts equal about 4 cups of chopped chicken (chopped to approximately ½-inch to ¾-inch in size). You may substitute with 4 cups of shredded rotisserie chicken if desired.
02 - Due to the cucumber in the salad, it may become slightly soggy if stored for more than one day in the fridge. For meal prep, consider substituting the cucumber with chopped bell pepper.
