Cowboy Butter Potatoes Easy (Print Version)

# Ingredients:

→ Potatoes

01 - 1.5 pounds red baby potatoes, halved
02 - Salt, to taste
03 - Black pepper, to taste
04 - 1 teaspoon fresh minced parsley

→ Cowboy Butter Sauce

05 - 4 tablespoons unsalted butter, melted
06 - 1 clove garlic, minced (or 1/4 teaspoon garlic powder)
07 - 1 teaspoon Dijon mustard
08 - 1 tablespoon fresh squeezed lemon juice
09 - 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
10 - 1/2 teaspoon paprika (or smoked paprika)
11 - 1/4 teaspoon crushed red pepper flakes (optional)
12 - Salt, to taste
13 - Black pepper, to taste

# Instructions:

01 - In a small bowl, mix 4 tablespoons unsalted butter (melted), garlic, Dijon mustard, lemon juice, parsley, paprika, crushed red pepper flakes, salt, and black pepper. Stir until combined.
02 - Preheat the oven to 220°C (425°F). Place the halved red baby potatoes in the bottom of a 9x13-inch or similar-sized baking dish. Season with salt and black pepper.
03 - Pour the melted cowboy butter over the potatoes and toss to coat evenly.
04 - Bake the potatoes in the oven for 35-45 minutes, tossing them halfway through, until they are cooked through and have crispy edges.
05 - Sprinkle the cooked potatoes with fresh minced parsley. Serve immediately and enjoy.
