Today I'm whipping up a total family favorite in my kitchen: extra creamy chicken with Parmesan and soft cheese. This meal always saves the day when I'm in a rush but still want something that tastes awesome. In just about half an hour, you'll plate up super soft chicken in a seriously dreamy creamy sauce. The mix of cream cheese, parmesan, and a dash of Mediterranean herbs turns tonight’s dinner into pure comfort food.

Why this dish always wins me over

What makes this one stand out for me is how well the flavors work together. You get juicy chicken, all hugged by a silky sauce made ultra creamy with rich cheese. The parmesan brings the kick, and my secret weapon—a spoonful of Dijon—gives a special zing. This is always a hit at our place. Even my picky kids go back for seconds.

Here’s what I use

For four people, I grab 600g of juicy chicken breast, 200g of thick double cream cheese, and 100g of freshly grated parmesan. I throw in 200ml of heavy cream, one clove of garlic, a teaspoon of Dijon, and a good shake of my favorite Italian herbs. For the pan, I use olive oil and season everything with paprika, salt, and pepper before topping with a handful of chopped parsley.

How I fix the chicken

I start by patting the chicken dry and sprinkling both sides with paprika, garlic powder, salt, and pepper. Sear it in a hot pan with olive oil until each side is golden brown, about four minutes each, then set it aside. With the tasty bits left in the pan, toss in the garlic, melt in the cream cheese, pour in the cream, and stir through the parmesan. Add Dijon and your favorite herbs—now the sauce is on point. Pop the chicken back in with the sauce and let it gently cook for ten minutes ‘til it’s fall-apart tender. Fresh parsley over the top finishes it off.

My favorite sides

At our house, this chicken is best with noodles or a fluffy batch of mashed potatoes to soak up that sauce. On lighter days, I go for a crunchy green salad on the side. Steamed broccoli, a bit of fresh spinach, or some plump cherry tomatoes work perfectly too—anything to scoop up more of the sauce.

How I switch things up

Sometimes I trade the chicken for turkey breast or tender pork fillet. For vegetarian days or friends, I go for thick-cut mushrooms or zucchini—you won’t miss the meat, honestly. Another tip: tossing fresh spinach or broccoli straight into the sauce makes it even heartier.

Keeping leftovers fresh

If we have any left (which honestly isn't that often), I pop it in the fridge and it stays good for two days. To reheat, I keep the heat low and give it a gentle stir so the sauce stays smooth. Sometimes I upgrade the leftovers to a rich pasta dish, or stuff them into a crispy wrap for lunch.

You asked, I answer

Friends in my cooking group always ask if you can make the sauce ahead. Totally–it keeps in the fridge and you can just cook your chicken in it later. My go-to herbs? Always fresh thyme, basil, and rosemary for top flavor. For freezing, defrost the sauce slowly so it keeps that creamy texture.

My can’t-miss trick

Why do I love this creamy parmesan chicken so much? Because it just never fails. Every time, it brings big smiles to my family. With fast prep and knock-out taste, it’s a go-to for our busy weeknights.

Tasty AND good for you

I always pay attention to balance. The chicken loads you up with good protein, and the cheese and cream have those healthy fats. Fresh herbs and garlic bring flavor and some good stuff your body craves, too.

For my kid helpers

My kids are all in for this—especially if I skip the Dijon and take it easy on the herbs. They love it best with noodles or super creamy mash. Even plain veggies get gobbled up when topped with this silky sauce.

Making it more earth-friendly

I like to cook greener where I can. That means local ingredients and not wasting food. Extra parmesan or cream cheese leftover from the fridge? Toss them right into this meal. Swap in whatever veggies are in season to make the whole thing even better for the planet.

Company’s coming over

For special nights, I dress it up more. Out comes the nice serving bowl, heaps of fresh herbs, and thin parmesan shavings for a fancy touch. Add a cold glass of white wine and a colorful salad, and suddenly it’s a dinner party.

Take your taste buds traveling

I love changing things up in my kitchen. Go Mediterranean by stirring in sun-dried tomatoes and olives for a mini Italian getaway. Sometimes I switch out the cream for coconut milk, add cilantro, and make it with an Asian twist. So fun to experiment!

Ready ahead of time

Busy days call for easy meals. This one’s perfect for meal prep. Divide it into containers, chill or freeze it—you’ll have a great meal ready to go. When you heat it, it tastes just as awesome as the first time.

My go-to pro moves

After lots of tries, I’ve got a few tricks up my sleeve. Lightly toasting the garlic first makes the sauce taste way deeper. Fresh herbs are a must. My top tip? A sprinkle of smoky paprika or crispy ham cubes take it to the next level.

Frequently Asked Questions

→ Can I get this ready ahead of time?

→ What sides should I serve with it?
Try pasta, potatoes, or rice. Steamed veggies or a crisp salad are a great match too.
→ Can I use different cheese?
Sure, Grana Padano or Pecorino both work well for some variety. Just pick a cheese with bold flavor.
→ How long is it good for?
It'll be fine in the fridge for 2 or 3 days. When reheating, go gentle so the sauce stays smooth.
