Effortless Cucumber Salad Fresh (Print Version)

# Ingredients:

→ Salad Base

01 - 2 tablespoons of fresh dill or parsley, chopped up (skip if you want)
02 - 2 stalks green onion, minced
03 - Half a red bell pepper, sliced thin
04 - Half a cucumber, sliced into thin rounds
05 - 2 cups shredded kale or napa cabbage

→ Dressing

06 - 1/4 teaspoon black pepper
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon powdered garlic
09 - 1 teaspoon Dijon mustard
10 - 1 tablespoon apple cider vinegar or lemon juice
11 - 1 tablespoon olive oil
12 - 3 tablespoons Greek yogurt

# Instructions:

01 - Let the salad chill for at least 10 minutes so flavors wake up, then dig in.
02 - Pour your dressing over the veggies and mix everything together really well.
03 - Stir together Greek yogurt, olive oil, lemon juice or apple cider vinegar, Dijon mustard, garlic powder, salt, and some pepper in a small bowl.
04 - Slice the cucumber and red bell pepper thin, shred the cabbage or kale, mince the green onion, and drop all that into a big bowl. Toss in the herbs if you want.
