Fresh & Healthy Cilantro Lime (Print Version)

# Ingredients:

→ Cilantro Lime Dressing

01 - 1 batch Greek Yogurt Avocado Salad Dressing (double the cilantro, omit the parsley)

→ Pasta Salad

02 - 375g short pasta (rotini, fusilli, or penne), cooked according to package directions
03 - 1 can (19 oz.) chickpeas, drained and rinsed
04 - 1 can (12 oz.) corn, drained and rinsed
05 - 1 medium cucumber, chopped
06 - 1 small red onion, diced
07 - 1/2 cup feta cheese or cojita cheese, crumbled
08 - Cilantro, for garnish (optional)
09 - Lime juice, to squeeze on top (optional)

# Instructions:

01 - Blend the ingredients for the cilantro lime dressing in a high-speed blender or food processor until smooth. Set aside.
02 - In a large bowl, mix together the cooked pasta, chickpeas, corn, cucumber, and red onion.
03 - Drizzle the prepared cilantro lime dressing over the salad and toss until all components are well-coated.
04 - Sprinkle crumbled feta cheese on top and gently toss to mix. Garnish with cilantro leaves and squeeze lime juice over the salad, if desired. Serve and enjoy!
