Garlic Butter Steak Bites Mash (Print Version)

# Ingredients:

01 - 450g sirloin steak, cut into bite-sized pieces
02 - 3 tablespoons unsalted butter, divided
03 - 4 cloves garlic, minced
04 - 1 teaspoon fresh thyme leaves or ½ teaspoon dried
05 - Salt and pepper to taste
06 - 2 tablespoons olive oil
07 - 900g Yukon gold potatoes, peeled and cubed
08 - ½ cup heavy cream
09 - Fresh parsley, chopped (for garnish)

# Instructions:

01 - In a large pot, place the cubed Yukon gold potatoes and cover them with cold water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain and return them to the pot.
02 - Add 2 tablespoons of butter and the heavy cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm while you prepare the steak bites.
03 - In a large skillet, heat the olive oil over medium-high heat. Add the steak bites in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until they have a nice browned crust and are cooked to your desired doneness. Remove the steak from the skillet and set aside.
04 - In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of butter. Once melted, add the minced garlic and fresh thyme. Sauté for about 1 minute until fragrant.
05 - Return the steak bites to the skillet and toss them in the garlic butter sauce to coat evenly. Sauté for another minute, then season with additional salt and pepper if needed.
06 - On a large plate, heap a generous serving of the creamy mashed potatoes. Top with the garlic butter steak bites, ensuring to drizzle some extra garlic butter from the skillet over the top. Garnish with fresh parsley before serving.
