Use a sharp knife to cut off the top and bottom of the pineapple and remove the rind. Slice into 3/4-1-inch spears or rings and use a small cutter to remove the core of the rings. Place the pineapple into a large zip-top bag and set aside.

In a small bowl, whisk together the melted butter, brown sugar, rum (if using), ground cinnamon, and a pinch of salt until well combined. Pour the mixture into the zip-top bag with the pineapple, toss gently to coat the fruit, and refrigerate for 20-30 minutes.

Warm the grill or a grill pan to medium heat at 375-400°F and ensure the grates are clean and well-oiled to prevent sticking.

Place the pineapple spears or rings on the grill. Cook for 4-6 minutes on each side, brushing each side with the excess marinade as it cooks.
